I’m not a fan of fungus, but I’ve heard that shiitake mushrooms are good for cancer. What do you think? –C.E., Boston, Massachusetts
Answer: I think some mushrooms are amazing! Shitake, known botanically as Lentinula edodes, are seriously great for immune function. They’re not just a Japanese delicacy, these mushrooms have been used for centuries, and have a safe history of healing that goes back thousands of years. Chinese medicine traditionally uses mushrooms to enhance qi (pronoucned “chee” which refers to your vital life force). We are not talking portabello though, this is altogether different.
Shiitake extracts definitely support immune function, but they also appear to have antiviral (even influenza), antibacterial, and antifungal effects. Ironic that fungus fights fungus, but it’s basically the good fungus (shitake) killing the pathogenic ones. The 2009 study published in Complimentary Therapies in Clinical Practice had data to show that shitake had “extensive antimicrobial activity against 85% of the organisms it was tested on, including 50% of the yeast and mould species in the trial.” This study even compared it to ciprofloxacin, a popular antibiotic. I found a trial suggesting antiviral effects against HIV virus as well as proliferation of leukemia! The activity was due to “lentin” an antifungal compound found in shitake. Is the study tight enough for you to go off your current treatment? No way, but it’s worth including in your regimen, with your doctor’s blessings.

Researchers isolated a substance called “lentinan” in shiitake that sparks your own immune system to do a better job at getting rid of cancer cells. Researchers conclude that lentinan helps “prolong the survival of patients with advanced gastric cancer.” In another Japanese study, published in Cancer & Chemotherapy, July 2012, researchers looking at shiitake’s effects on liver cancer suggested that the mushrooms “might be used for alleviating side effects of chemotherapy and preventing the progression of liver cancer for patients with chronic hepatitis.”
Shiitake is active against the hepatitis B virus, so you might say this is a liver-loving mushroom in many ways. It protects the colon too. Over 10 years ago, a study published in the Journal of Alternative and Complementary Medicine found that lentinan was “able to retard the development of tumors” in mice. In fact, they said, “significant regression in tumor formation was observed.” Remarkable!
Many studies have found that shiitake mushrooms are helpful for everyday ailments. For example, some research shows that shiitake may reduce cholesterol levels in the blood, and lower blood pressure. Did I mention that shiitake mushrooms are a natural source of protein and vitamin D? Both are important for immunity.

Shiitake mushrooms taste good, I add them to my jasmine rice along with pure saffron, turmeric, onions, grapeseed oil and garlic. Yum! There are excellent supplements/extracts of Shitake sold at health food stores, and you can also buy multi-tasking formulas which contain several different medicinal mushrooms. Those are a little harder to find, two good ones are MycoPhyto by Econugenics or Mushroom Optimizer by Jarrow.

It's the drink you will never forget~Strawberry Punch............  so refreshing 

1 can (46 ounces) pineapple juice, chilled
2-1/4 cups water
3/4 cup thawed pink lemonade concentrate
3/4 cup sugar
1 quart strawberry ice cream
2-1/2 quarts ginger ale, chilled
Directions
In a punch bowl, combine the first four ingredients. Add ice cream; stir gently. Add ginger ale; stir gently. Serve immediately. Yield: 6 quarts.
Nutritional Facts
1 serving (1/2 cup) equals 74 calories, 1 g fat (1 g saturated fat), 3 mg cholesterol, 11 mg sodium, 16 g carbohydrate, trace fiber, trace protein.

☆.•♥• Delicious Homemade Salsa Recipe!•♥•☆

I Stopped buying the jar stuff once I tasted this homemade salsa. 

Simple and delicious: 

8 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped
1 1/2 cups green peppers
1 cup jalapeno pepper, chopped
6 garlic cloves, minced
2 teaspoons cumin
2 teaspoons pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1/3 cup chopped Italian parsley or Cilantro if you prefer* :)
1 (15 ounce) can tomato sauce
1 (12 ounce) can tomato paste

Directions:

Mix all together and bring to a slow boil for 10 minute.

Seal in jars and cook in hot water bath for 10 minute.

This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller pieces.

Yields 3-6 quarts or pints.
Add 2 tbsp. freshly squeezed lime juice and salt and peper to taste.

Bacon Egg Breakfast Cups  PLEASE LIKE  - BEFORE - SHARING - THANK YOU 

4 eggs
4 slices of precooked bacon (if you are using raw bacon, make sure to heat it up so it is cooked about 50% before placing it into the molds)

1. Preheat oven to 400F. Spray muffin tin with pam spray.
2. Line muffin pans with bacon so that it circles each mold.
3. Break an egg into the center of each mold. Bake for about 8 minutes or until egg is cooked to the doneness of your liking. Serve while warm.

Crockpot Orange Chicken

Ingredients:
2 large carrots, peeled and sliced about 1/2-inch thick
2 large red or green bell peppers, cut into 1/2-inch chunks

2 tsp. ground ginger
1 tsp. salt
1/2 tsp. pepper
8 ounces orange juice concentrate
2 cups Mandarin orange segments or fresh orange segments
2 Green onions, chopped
hot cooked rice
Directions:
Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice in Crockpot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments and green onions. Serve chicken liquid in gravy boat, if desired.

This is interesting. After reading this, you'll never look at a banana in the same way again.

2 (3 ounce) packages sliced pepperoni
Directions:


Preheat oven to 350 degrees. Lightly grease a 9X13 casserole dish.

Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.

In a skillet over medium heat, cook the sausage until evenly brown, drain grease. Mix in the cooked pasta and pasta sauce. Pour into prepared casserole dish.

In a bowl, mix the cottage cheese, olives, mushrooms and mozzarella cheese.

Spoon the cheese mixture over the sausage and pasta mixture. Top with pepperoni slices.

Bake 25 minutes in the preheated oven, until bubbly and lightly browned.


Pizza Casserole:


1 (16 ounce) package uncooked rotini pasta
1 lb ground Italian sausage
1 (24 ounce) jar pasta sauce
1 (16 ounce) container cottage cheese
1 (2 1/4 ounce) can sliced black olives, drained (optional)
1 (4 ounce) can mushrooms, drained
12 ounces shredded mozzarella cheese

 1 cup sharp cheddar cheese, shredded
 Sour cream, optional

TIP: I've also made it without the potato flake crust - and just used a store bought pie crust - do whatever you'd like - just make it! It is delicious.

Something else I didn't know ... I asked my Doctor why people need to urinate so much at night time. Answer from my Cardiac Doctor -
Gravity holds water in the lower part of your body when you are upright (legs swell). When you lie down and the lower body (legs and etc) seeks level with the kidneys, it is then that the kidneys remove the water because it is easier. This then ties in with the last statement!
I knew you need your minimum water to help flush the toxins out of your body, but this was news to me.
Correct time to drink water... Very Important. From A Cardiac Specialist!

Drinking water at a certain time maximizes its effectiveness on the body: 2 glasses of water after waking up - helps activate internal organs
1 glass of water 30 minutes before a meal - helps digestion
1 glass of water before taking a bath - helps lower blood pressure
1 glass of water before going to bed - avoids stroke or heart attack


I can also add to this... My Physician told me that water at bed time will also help prevent night time leg cramps. Your leg muscles are seeking hydration when they cramp and wake you up with a Charlie Horse.

Most heart attacks occur in the day, generally between 6 A.M. and noon. Having one during the night, when the heart should be most at rest, means that something unusual happened. Somers and his colleagues have been working for a decade to show that sleep apnea is to blame.

1. If you take an aspirin or a baby aspirin once a day, take it at night.
The reason: Aspirin has a 24-hour "half-life"; therefore, if most heart attacks happen in the wee hours of the morning, the Aspirin would be strongest in your system.

Note: There may be NO pain in the chest during a heart attack.

The majority of people (about 60%) who had a heart attack during their sleep did not wake up.
However, if it occurs, the chest pain may wake you up from your deep sleep.

If that happens, immediately dissolve two aspirins in your mouth and swallow them with a bit of water.

Afterwards: - Call 911. - Phone a neighbor or a family member who lives very close by.
- Say "heart attack!" - Say that you have taken 2 Aspirins. - Take a seat on a chair or sofa near the front door, and wait for their arrival and ....DO NOT LIE DOWN!

A Cardiologist has stated that if each person after receiving this e-mail, sends it to 10 people, probably one life could be saved!

    Irish Boxty Pancakes 
Traditional Irish potato pancakes, also known as boxty, are made with a mixture of mashed and grated potatoes for a texture that's part pancake, part hash brown. 

For The Mashed Potatoes
2 pounds  potatoes, peeled
Coarse salt and freshly ground black pepper
1 cup milk or cream
4 tablespoons unsalted butter

For The Boxty Potatoes
1 cup grated russet potato, squeezed dry to remove excess moisture
1 large egg
1 large egg yolk
1/4 cup milk
1/4 cup thinly sliced scallions
1/2 cup all-purpose flour
2 teaspoons coarse salt
1 teaspoon baking powder
1/2 teaspoon freshly ground pepper
1/4 cup unsalted butter, preferably Irish, plus more for serving

Directions
Make the mashed potatoes: Bring a saucepan of water fitted with a steamer insert to a boil over medium-high heat. Peel and cut potatoes into 1-inch pieces; add to steamer insert. Cover and cook until fork-tender.

Heat milk and butter in a small saucepan over medium-high heat. Transfer potatoes to a large bowl; mash potatoes using a potato masher. Slowly add milk mixture and stir to incorporate with a wooden spoon until smooth; season with salt and pepper.

Make the boxty potatoes: Transfer 1 1/2 cups mashed potatoes to a large bowl; reserve extra mashed potatoes for another use. Add grated potato to bowl with mashed potatoes. Whisk together egg and egg yolk; add to bowl with potatoes along with milk and scallions and stir to combine. In a medium bowl, whisk together flour, salt, baking powder, and pepper; add to bowl with potatoes and stir to combine.

Melt 2 tablespoons butter in a large heavy-bottomed skillet over medium heat. Working in batches, adding butter as necessary, add 2 tablespoons batter to skillet and gently spread to form a 2-to-3-inch round; cook, turning, once, until browned on both sides, about 4 minutes per side. Serve immediately with butter.

    Dirty Pirate Popsicles

Ingredients: 
 2 1/2 cups Coke
 1/3 cup Captain Morgan Spiced Rum
 1/3 cup Kahlua

Instructions:
    Place all ingredients in a large glass and stir to combine. Pour mixture into popsicles mold.
     Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight. To release popsicles run hot water on the outside of popsicle molds for a 2-3 seconds.

*Slightly flat Coke will produce a popsicle that stays frozen longer. To quickly and manually flatten out the carbonation, empty out enough Coke from a 2-liter bottle to leave a 3-inch space from top of bottle to top of coke. Place cap back on and shake vigorously for 10 seconds. Set aside to leave bubbles to subside.

As a rule, you should try to avoid as much as possible industrial food and beverages
 
1) The classical : lemon/cucumber:
 Mix in a pitcher: 10 cups of water + 1 cucumber and a lemon, thinly sliced + 1/4 cup fresh finely chopped basil leaf + 1/3 of finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.
 
2) The granite : Strawberry/Lime or Raspberry/Lime
 Mix in a pitcher : 10 cups of water + 6 strawberries / 0r Raspberries and one thinly sliced lime + 12 finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.
 
3) The digestive : Fennel/citrus

 Note that a part from the berries, sage leafs is the herb that has the highest antioxidant content.
 Mix in a pitcher : 10 cups of water + 1 cup of blackberries that have been very slightly crushed + 3-4 sage leaves. Leave in refrigerator overnight before serving.
 
5) WATERmelon : watermelon/Rosemary
 Mix in a pitcher : 10 cups of water + 1 cup of watermelon cut into cubes + 2 rosemary stems. Leave in refrigerator overnight before serving.

1 1/2 teaspoons salt
1 tablespoon sugar
1 tablespoon baking powder
2/3 cup milk or buttermilk (which is what is used for the true KFC recipe) just read the comments below, lol
1/3 cup vegetable shortening
Directions
Preheat oven to 425ºF.
Sift together flour, salt, sugar and baking powder into mixing bowl.
Make a well in the flour mix and add the milk.
Add shortening and begin kneading with hands (to cut in) the vegetable shortening and flour in the milk until thoroughly mixed.
Add milk, if needed to form, and mix.
Turn onto floured board, and knead gently 6 to 8 times.
Pat dough to 1/2-inch thickness.
Cut into biscuits.
Place on baking sheet and brown in oven 10-13 minutes.
Makes about 9 biscuits.

    Turn onto floured board, and knead gently 6 to 8 times.
    Pat dough to 1/2-inch thickness.
    Cut into biscuits.
    Place on baking sheet and brown in oven 10-13 minutes.
    Makes about 9 biscuits.

Pie Filling Ingredients:
4 tbsp butter, melted
1 egg, beaten
1 tbsp all purpose flour
½ cup granulated sugar
1 ½ cups shredded sweetened coconut
¾ cup whole milk
1 tsp vanilla bean paste (extract will work)


Crust & Topping:
1 (6 oz) Chocolate Oreo Pie Crust
Ghiradelli Milk Chocolate Chips, melted
½ cup whole roasted almonds


Whisk the pie ingredients together: melted butter, egg, flour, sugar, coconut, vanilla paste and milk together.
Spread ¼ cup almonds on the bottom of the pie crust, cover with ½ of the melted milk chocolate.

Place in the freezer for 5 minutes to set up. After the chocolate sets up a little bit, pour in the pie filling.
Bake at 350 degrees for 40-45 minutes or until set. The top will be golden brown.
Allow to cool.
Scatter remaining ¼ cup almonds on the top of the cooled pie; pour melted chocolate over the almonds. Put in fridge for the chocolate to set up. Enjoy!

2 lbs chicken tenders or 4 large chicken breasts 
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper 
1/2 cup whole milk 
3 cups cheddar cheese, grated
1 teaspoon dried parsley 

Sauce:
1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter

Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in. 

Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

    Okay all my southern friends are upset because I did a Northern cornbread this morning and a Mexican cornbread but not that "good ol' to die for" Southern Cornbread that I was raised on....did you really think I'd forget?  Southerners don't put sugar in their cornbread. They like a savory, buttery bread-like taste and not a sweeter cake like cornbread as Northeners like.  They like a cornbread they can dip in their soup or chili and it won't fall apart.  As my Dad used to say, "If I'd wanted a dessert I would have bought cake!"  You could get away with putting sugar in his cornbread.

Southern Style Country Cornbread

3 tablespoons bacon drippings (see note below) 
1 cup cornmeal 
1/2 cup flour 
1 tablespoon baking powder 
1 teaspoon baking soda 
1 teaspoon salt 
2 eggs 
1 1/2 cups cold buttermilk 

Preheat the oven to 425 degrees. Pour bacon drippings or shortening in a cast-iron skillet and place in the oven till melted and sizzling. 

Combine the cornmeal and flour. In separate bowl whisk eggs until foamy then whisk in buttermilk. Add the rest of the dry ingredients to the cornmeal mixture.
Combine wet and dry ingredients. Mix should be pourable. Carefully take the hot skillet from the oven, pour the batter into the hot pan with the melted drippings. This is what gives you your crispy, buttery crust. 

Place back in the oven and bake for 20 to 25 minutes, until golden brown or when knife inserted in center comes out clean.
Note:  You can also use Crisco butter flavor, or regular Crisco shortening.
